How does wine preservation work?

As soon as a bottle is opened the wine remaining in the bottle will be exposed to air and will start to rapidly oxidise and deteriorate rapidly. Typically an opened bottle of wine will only remain fresh for a day or two. By using a wine preservation system you can remove oxygen from the headspace and slow down the oxidation process. By slowing down oxidation and therefore slowing down the deterioration process, an opened bottle of wine can last for anything up to 6 weeks depending on the type of system used. With sparkling wine comes the additional problem of loss of bubbles since the carbon dioxide will escape into the atmosphere. Using a sparkling wine preservation system will help to prevent some of the carbon dioxide bubbles coming out of solution. |
Le Verre de Vin, Presorvac and any dispense cabinet using inert gas (usually nitrogen or argon) are ideal for commercial use.
Le Verre de Vin and Presorvac are the only systems that preserve both still and sparkling wine.
Preserving still wine:
Le Verre de Vin and Presorvac work by removing oxygen and creating a precisely controlled level of vacuum within an opened bottle of wine. Cruvinet, Enomatic and Oz Bars, on the other hand, function by replacing the oxygen with an inert gas, nitrogen.
Le Verre de Vin is a fixed unit that sits on the wall or under a counter and can be used to preserve an unlimited number of bottles. It has two nozzles one for still wine and one for sparkling wine.
An opened bottle of wine may be resealed using a specially designed rubber stopper. Once the stopper is inserted in the bottle, the user inserts the bottle into the vacuum nozzle on the left hand-side of the unit and then holds it in place until the green light illuminates to indicate that the optimum level of vacuum has been reached. As soon as the green light illuminates, the system will shut off automatically and the bottle may be removed and returned to its storage place

Presorvac is a hand-held unit which may be used anywhere in the bar but should be returned regularly to it’s holder/battery charger. It can preserve an unlimited number of bottles. Unlike, Le Verre de Vin, it only has one nozzle but has a lever switch with two settings – one for still wine and one for sparkling wine. An opened bottle of wine may be resealed using a specially designed and unique pour-through stopper. Once the stopper is in place the user inserts the Presorvac unit into the stopper. The user then switches the lever to over to the red marker and presses the operating button which starts the vacuum pump. The user holds it in place just until the red light illuminates to indicate that the optimum level of pressure has been reached. As soon as the user removes their finger from the button the vacuum pump stops. The bottle may then be returned to its storage place . |

Cruvinet, Enomatic, Oz Bars and WineStation are very different systems in that they provide a means of displaying, dispensing and storing wine as well as a preserving wine. The cabinets are divided into temperature controlled compartments, one for red wine and the other for white. Cruvinet cabinets are generally made to order holding anything from 6 to 100 bottles. Enomatic and WineStation will dispense pre-programmed and exact measures. WineStation has the additional benefit of being able to remove a bottle together with its dispense head while retaining the nitrogen in the bottle and therefore the wine is still being preserved once it's outside the cabinet. This, therefore anables you to preserve an unlimited number of bottles. WinePoint also has a unique self-cleaning facility for the dispense heads.

Preserving sparkling wine:
Le Verre de Vin and Presorvac work by creating a precisely controlled level of pressure within an opened bottle of wine. Le Verre de Vin uses carbon dioxide to create the pressure, whereas Presorvac simply uses air.
An opened bottle of wine may be resealed using a specially designed rubber stopper held in place with a metal clamp. Once the stopper is inserted and secured with the clamp, the user inserts the bottle into the gas nozzle on the right hand-side of the unit and holds the bottle in place until the green light illuminates to indicate that the optimum level of pressure has been reached. As soon as the green light illuminates, the system will shut off automatically and the bottle may be removed and returned to its storage place.
An opened bottle of wine may be resealed using a specially designed screw-on stopper. Once the stopper is in place the user inserts the Presorvac unit into the stopper. The user switches the lever over to the blue marker and presses the operating button which starts the pressurising process. The user then holds the unit in place just until the red light illuminates to indicate that the optimum level of pressure has been reached. As soon as the user removes their finger from the button the pressure pump stops.
